The "hangi" (food prepared and cooked
the traditional Maori way) is a must try while
in Rotorua. Pits are dug into the ground and
filled with hot rocks, and the food is lowered
into the pit. The pit is then sealed up for
the food to cook slowly underground, preserving
the original flavours of the food. Hangis can
be enjoyed at most hotels with restaurants.
